Ingredients:
4oz Plain Chocolate
4oz Butter
8oz Caster Sugar
4oz Plain flour
2 Eggs
1/2 tsp Baking Powder
Pitch of Salt
Method:
Preheat oven to 160 degrees Celsius. Grease a baking tin.
Melt the chocolate and butter together (melt them in the microwave is the easiest on reduced heat) and ensure well mixed.
Add the remainder of the ingredients and mix thoroughly.
Transfer mixture into baking tray and place in oven and cook for 30 minutes.
After 30 minutes check brownie - it should be baked on top but soft in the centre.
Serving suggestions:
Cover top of brownie with either icing sugar or some melted chocolate.
Alway nice with ice cream or cream

My Special Pork Recipe
Ingredients:
- Pork Chops/ Steaks (amount depends on people eating)
- Wholegrain Mustard
- Large bag of Doritos (crushed into small pieces)
- Salt and Pepper
Method:
Preheat oven to 200 degrees
Start by scoring the pork chops/ steaks on both sides.
Then rub around 1/4 tsp of Wholegrain Mustard into each side of the chops (you can add more depending on your preference) ensure that it goes into the scored parts of the meat.
Lay the pork onto half the bag of crushed crisps on the baking tray, and then cover the top with the other half of the crisps (ensure covered evenly) and season with salt and pepper on top.
Place into oven and allow to cook for 20-30 minutes until cooked through. Remove from oven when cooked and serve straight away.
Best served with Creamy Mash Potato and vegetables.
You can always add a peppercorn sauce to serve with the pork which is always good.

Sweet Red Onion and Goat's Cheese Tartlets
Ingredients:
- Sheet of Just Roll Puff Pastry
- x1 Red Onion
- 2 tb spoons of Sugar
- Knob of Butter
- Goats Cheese
- Olive Oil to grease tray.
Preheat oven to 160 degrees. Grease baking tray with a little Olive oil so lightly coated.
Prepare the Red onion by dicing into small cubes and placing into a bowl with the butter and sugar and cook in the microwve until the onion is soft. Allow to cool slightly while preparing the pastry.
Rolling the pastry out and cut into 12x12 cm squares and scoring 1.5cm within the pastry to help it rise.
Put the tartlets together by spooning the onion mixture onto the pastry (drain off most of the butter first). Place generous slices of Goat's Cheese on top on the onion and place into the oven.
Cook for 15 minutes until the edges have risen well.
Remove from oven and eat hot or cold with salad.
Homemade Nando's and Potato Wedges
Ingredients:

- Bag of New Potatoes
- Olive Oil
- Pepper
- Salt
- Sugar (just a pinch)
- Herbs
- Chicken Breasts
- Nando's marinade sauce (E.G. Hot, BBQ...)
Method:
Prepare the chicken by coating chicken in Nando's sauces leave to marinade in the fridge for a minimum of 15 minutes (the longer the better).
Preheat oven to 160 degrees
To start with prepare the potatoes by halving and quartering them length ways to form wedges.
Mix the olive oil with the salt, pepper, mixed herbs and a little sugar to taste and then add the potato wedges into the mixture and ensure potatoes are evenly coated.
Place in oven and cook for 20 minutes turning them after 10 minutes.
Place the chicken under the grill and cook the chicken until cooked all the way through, should take around 20 minutes (turn half way through). Then serve.
Double Chocolate Cheesecake
Ingredients:
For the Base-
- 250 grams Chocolate Biscuits (I use Bourbon Biscuits- the more chocolate the better), crushed
- 115 grams Butter, melted
- 200 grams Full Fat Cream Cheese
- 400 grams Mascarpone
- 25 grams Caster Sugar
- 3 Eggs
- 40 grams Cocoa Powder
- 100 grams Dark Chocolate (70%+ chocolate is the best)
- Cocoa Powder OR Icing Sugar
- Vanilla Ice Cream OR Cream
Method:
Preheat oven to 160 degrees celsius/ gas mark 3.
Prepare an 8 inch spring form cake tin by greasing - not really necessary to line as easy to get out of tin.
Crush biscuits by taking your anger out on them with a rolling pin in a sandwich bag until you have crumbs. Mix biscuit crumbs into the melted butter and press into the bottom of the cake tin. Ensure it is an even lay and no gaps, then place into the fridge to cool for around 30 minutes.
Mix the Cream Cheese, Mascarpone and sugar together until smooth. From there add in the Eggs and Cocoa Powder (sift into the mixture) and ensure smooth again. The last ingrdient to add is the chocolate, melt and add in thirds to the mixture and stir throughly.
When the mixture is smooth, pour into the cake tin on top of the biscuit base and make sure it is level.
Place into the oven and cook for an hour but check after 50 minutes. When the Cheesecake is ready it will be set at the top however still soft in the centre.
When cooked remove from oven and let cool and then put into the fridge to chill (as it is nicest when chilled).
When ready to serve remove from tin, dust with either cocoa powder or icing sugar and a nice heap of Ice cream (I love 'Phish Food' Ben and Jerry's to go with this) next to the Cheesecake on the serving plates.
Then eat but a little hint - go for small pieces as it is very rich!
